Cup Profile

This "Signature" washed lot offers a classic and structured Peruvian profile, distinguished by its cleanliness and sweetness. The coffee presents a dominant chocolate aroma accompanied by bright notes of lime. In the cup, expect a rich sweetness featuring caramel, molasses, and white chocolate, balanced by medium acidity and a medium body that leads into a smooth, sweet finish.

Micro-Lot & Processing Details

This lot reflects a dedication to consistency and bean integrity. The cherries were selectively handpicked to ensure optimal ripeness before undergoing a controlled mechanical drying process in a Guardiola.

To preserve the cellular structure of the bean and secure a long shelf life, the coffee was dried using low-temperature hot air (circulated between 35°C and 40°C) for approximately 72 hours (3 days). This slow, homogeneous drying method allows for precise moisture control, resulting in the clean and consistent cup profile noted in the sensory analysis.

Located in the renowned volcanic region of Villa Rica, Pasco, Fundo Sudetia del Sur is a fourth-generation family estate run by Mick Dieter. The farm is a model of sustainability and social responsibility in the region.

  • Ecosystem: The estate spans 180 hectares, with coffee grown 100% under the shade of native "Pacay" trees. Notably, 30 hectares are preserved exclusively as a natural forest reserve to protect local biodiversity, and 50 hectares are planted with fruit trees that contribute to the ecosystem's complexity.

  • Social Impact: The Dieter family provides year-round employment to 20 families. Uniquely, the farm funds an on-site primary school and a medical center staffed by a doctor, nurse, and obstetrician, serving both the workers and the surrounding rural community.
