Maria Cristina Llach is a highly respected, fourth-generation coffee producer from El Salvador. Her family has been producing coffee under the name Llach Cafe since 1860 in the Santiago de Maria region. She personally took over the family's operations in 1984 and has since been dedicated to producing high-quality, specialty coffee.
Her farms, which include La Haciendita Estate, are part of a long legacy of coffee innovation; her family is even credited with inventing a "mucilage remover," a machine that mechanically strips the fruit's sticky layer from the coffee bean, which is now a key part of the washed processing method used worldwide.
