This Limited Micro-Lot ESCS-5/6 was hand-harvested in May and features a controlled anaerobic fermentation process. It yields a distinctively fruity and complex profile with unique notes of sweet wine and olives. It is sourced from Fundo San Crispín, produced by Ingo Noche.

It presents a unique flavor profile with notes of sweet wine, tamarind, olives, and pineapple, balanced by smooth nuances of vanilla and cream, leading to a silky body and a long, fresh finish.

Micro-Lot & Processing Details

This coffee comes from Limited Micro-Lot ESCS-5/6. It was hand-harvested in May. The cherries were floated to ensure uniform quality and then underwent 72 hours of anaerobic fermentation in sealed 225-liter tanks. After pulping (disc method), the coffee was slowly machine-dried to maintain consistency and protect the delicate aromatics.

Fundo San Crispín is a fourth-generation coffee estate located in the renowned district of Villa Rica, Pasco. The farm extends across 220 hectares, with 60 hectares protected exclusively as a natural forest reserve to preserve biodiversity and maintain a thriving ecosystem. 
Social Impact: The farm provides year-round employment to 30 families and seasonal work to around 200 more. Notably, they offer an on-site daycare program so that children are cared for while their parents work, strengthening local livelihoods and ensuring consistent quality throughout the production cycle.
