Known as Lot "Cumbre," this micro-lot reflects a dedication to careful post-harvest handling. The cherries were selectively handpicked to ensure optimal ripeness. Following the wash process, the coffee was sun-dried on raised, covered beds for 20 days. This slow, natural drying phase is critical for protecting the bean's integrity and achieving a precise moisture content of 10.7%, ensuring a consistent and enhanced cup.
